aka avocado cilantro dressing.
I have no idea how I stumbled across this recipe initially, but it is basically the best things in the world all smooshed together into a form that you can eat on salad, or pasta, or with chips or pretty much anything.
I apologize for the lack of photographs, but I was rushing to put things together for a potluck, so you’ll have to rely on your imagination. So, gather together
1 ripe avocado
1 bunch of cilantro (you need 3/4 cup tightly packed, which was about 1/2 a bunch from the Yes! market)
1/2 cup plain nondairy yogurt (I used almond today, but WholeSoy plain would be better, assuming it returns to stores someday)
about 1 tsp chopped garlic
1/2 tsp sea salt
1/2 tsp sugar
What I put this on today was a quinoa salad that included: 1 cup of dry quinoa cooked with vegetable broth; 1 can black beans, drained and rinsed; 1 cup frozen corn; 1 zucchini, chopped into bite-sized pieces; 1 red bell pepper, also chopped. The best thing about this recipe is that you can prepare it while catching up on the phone with your very best friend in the whole wide world ™ because it’s really just chopping and tossing. And people will be very impressed with your kitchen skills.
